Aside from the usual yogurt, eggs, oatmeal, cereal and toast that I serve my kids, I try to do make special breakfast items during the week for variety. Here are some of them.
For the fish - buy boneless milk fish from a specialty Asian store. Even if it has been marinated already, it is still good if you marinate it some more with garlic, vinegar, salt and pepper. Marinate it preferably overnight, then pan fry it until it gets crispy on both sides.
Serve with sinangang - Saute garlic, add in day old rice, salt, pepper. Mix until rice is heated through.
Tomato and onion salad - Combine chopped tomatoes and onions, season with fish sauce.
My go-to breakfast when I am tired of the usual. Saute green onions/leeks, add 2 eggs beaten, seasoned with salt and pepper. (Cook like scrambled eggs). Heat tortilla in the microwave for 10-15 seconds. Put some store bought salsa, black beans with cumin, eggs. Top with mexican cheese.
Preheat oven to 350 F. In a bowl, mix 4 eggs, salt, pepper, a little bit of milk. In an oven-safe pan, saute onions, tomatoes, bell peppers, mushrooms. Put in egg mixture into the pan and put in the oven for 10-15 minutes until eggs are cooked. Serve with bagels and fruits.
I put everything I have in the fridge to this omelette - onions, tomatoes, bell peppers, mushrooms, spinach, brocolli, all kinds of cheeses, ham, bacon! Top with parsley. :)
